Menu Plan Monday, 1/25 – 1/31

January 24, 2010

Both my boys ate the Meatless Pasta Pie last week, which definitely makes it the stand-out meal!

Not much in the mood for experimenting this week, so I’m keeping it simple and using stuff up that I have in house.

Monday: Spaghetti & spinach meatballs (beef + chopped spinach — from my freezer), garden salad

Tuesday: Make your own pizza (I bought pre-made whole wheat dough)

Wednesday: My birthday! Dinner out

Thursday: Slow Cooker Coq au Vin (trying a new recipe), steamed broccoli, challah rolls

Friday: Man in the Moon or eggs poached in Slow Cooker Ratatouille (from freezer)

Saturday: Slow Cooker Split Pea Soup with Flanken (no ham hocks here!)

Sunday: Order in

Have a good slow cooker Navy Bean soup?

Your menu sounds delicious! Going to check out that meatless pasta pie – especially if the kids ate it up (good indicator my kids will too) :)

You’re recipe names are cool. yours must be a fun house. I need to do that with my kids. As for the comment above, I saw a great Navy Bean Recipe from Relish that they serve in the Senate.

Want to Try

Peanut Butter Baked Oatmeal: I often swirl a tablespoon of peanut butter into my bowl of oatmeal at breakfast; this is a make-ahead version that I could portion and freeze.

Cook to This

"A Hazy Shade of Winter" by Simon & Garfunkel. I heard this on the radio recently and was shocked to realized I'd forgotten The Bangles' version is a cover of this original.
