Menu Plan Monday, 11/1 – 11/7

I did make the Korean Meatballs this week, though I didn’t write a post about them. I found the mixture so wet that I had to add some panko breadcrumbs to the mix or they never would have held together. I also skipped the pan-frying step and just baked them. The flavor was good, but we missed having some sort of sauce with them, and in my version they turned out a bit tough. I would try something different next time, like Asian Meatballs in Garlic Black Bean Sauce.
Monday: Cheesy greens over pasta (thanks, Bard!), using a homemade cheddar cheese sauce and a mix of braising and collard greens
Tuesday: Roasted Carrots with Thyme, roast chicken with garlic and potatoes
Wednesday: Roasted Butternut Squash with Blue Cheese & Walnuts, challah rolls
Thursday: Martha’s Slow-Cooked Tex-Mex Chicken & Beans, tortilla chips, farm share veggies
Friday: Grilled chicken tacos, tomato salad
Saturday: Dinner out
Sunday: Onion soup (making our own beef stock), baguettes

The butternut squash with blue cheese and walnuts looks AWESOME! I actually just bought a nice wedge of blue cheese last week—I might make this to bring to work for lunch.
