Menu Plan Monday, 11/15 – 11/21

My stove and oven use propane for fuel, and due to some construction we’ve been without propane since Saturday morning. We planned for it, and hope to have it hooked back up tomorrow. In the meantime, it’s been very unusual for us, not being able to boil up a pot of water for pasta.
I am freezing as I write this, and all I can think about for my meal plan is soup: Slow Cooker Split Pea Soup with Flanken, Hot & Sour Soup, Chicken, Edamame & Red Pepper Soup… the list goes on and on. Unfortunately the boys don’t care much for soup, so I have to hold back on soupifying the menu plan for the week.
Monday: Chicken salad (from leftover roast chicken), lettuce, tomatoes, baguettes
Tuesday: Slow Cooker Chicken Vindaloo (with cauliflower instead of green beans), basmati rice, whole wheat naan
Wednesday: Roast chicken drumsticks, Split Pea & Barley Soup, red pepper rings
Thursday: Baked Ziti, garden salad, ciabatta rolls
Friday: Roast chicken pieces, roast butternut squash, green beans, challah
Saturday: Leftovers from a lunch tailgate in the afternoon (including J.’s smoked brisket)
Sunday: Order in or go out
