Menu Plan Monday, 1/3 – 1/9

I’m jumping into 2011 with an urge to declutter, so I’m using up some ingredients that have been hanging around my fridge and pantry for too long. I have fresh lemons I can’t remember buying, a bag of carrots from our last farm share pick-up in mid-December, and a large piece of fresh ginger from Thanksgiving’s apple sangria. Everything is still in good shape, but I’m sure they’re on borrowed time. My pantry is also overflowing, so I’m going to use up half a package of taco shells, a bag of split peas, and two half-empty bags of soup noodles this week.
On Thursday I should be receiving fruits and vegetables from Urban Organic, a home delivery service for organic produce and other products. I got a great Groupon for their Original Value box, and wanted to try them out now that my CSA is over for the winter. This week’s box includes spinach, sweet potatoes, eggplant, pears, and more, and I am very excited to get my package!
Monday: Mrs. Jones’ Macaroni & Cheese, roasted cauliflower (not a very colorful meal, but the cauliflower is taking up too much room in my fridge)
Tuesday: Lemon-Roasted Chicken, Roasted Carrots with Thyme, dinner rolls
Wednesday: Chicken Tacos with mashed kidney beans, green salad
Thursday: Slow Cooker Split Pea Soup with Flanken, garden salad, challah rolls
Friday: Chicken noodle soup (making a fresh batch), edamame, challah
Saturday: Order in or go out
Sunday: Vegetable Jalfrezi, basmati rice, naan

I am very interested in how the Urban Organic delivery goes! A CSA always seemed like too much food for just me, but this company’s “Little Box” might work. Please let us know what you think!
