There has been a lot of cooking going on here, and it feels good. The combination of terrible weather (snow days where we’re caught inside), a lighter winter after school activities schedule, and just the general desire to hunker down and be domestic during this season has had me appreciating my time planning and cooking.

In case you missed them last week, there were two stand-out new recipes Vegetarian Mushroom Barley Soup, Chicken Salad with Green Olives & Celery. I also wrote about my experience with Urban Organic’s produce delivery service, and explained how to make a Pudding Poke Cake.

This week I’m looking forward to cooking my first Filipino dish, Ginataang Manok, bone-in chicken pieces cooked in coconut milk and ginger, with spinach.

Monday: Sliced grilled steak over a chopped vegetable salad, challah

Tuesday: Turkey burgers with lettuce and tomato, sweet potato french fries, broccoli

Wednesday: Farro with Roasted Butternut Squash & Goat Cheese

Thursday: Ginataang Manok (chicken cooked in coconut milk with spinach), brown rice

Friday: Chicken noodle soup, spinach salad, challah

Saturday: Eat out or order in

Sunday: Spinach Burritos with Salsa Verde
