Menu Plan Monday, 1/24 – 1/30

mealplanmonday v1 Menu Plan Monday, 1/24 1/30

The boys had two snow days last week, and combined with Monday off for Martin Luther King, Jr. Day, only went to school twice in the week. I am afraid to look at an updated forecast for this week, as there are whispers about another major storm coming our way this Wednesday.

Monday: Spinach Lasagna Roll-Ups, roasted asparagus

Tuesday: Linguine with Chicken Thighs, garden salad

Wednesday: Slow Cooker Split Pea Soup with Flanken, baguettes,

Thursday: Honey Spiced Chicken Thighs, steamed green beans, dinner rolls

Friday: Leftovers, challah

Saturday: Out to dinner

Sunday: Hoping to convince J. to smoke something! It’s been too long

You are cooking dinner on your birthday? I hope it is your favorite.

    Dara Reply:

It is a favorite, and it’s easy. I’m eating out so many times this week that I thought I’d prefer to cook than go out!

I think the lasagna roll-ups look cool!

    Dara Reply:

Everyone ate them! I made some plain ones, but A. ate both that and spinach ones with sauce. Very pleased. Have to write up a post. :)

Want to Try

Moroccan Chicken Tajine: I recently had a chicken tajine dish at Fig & Olive in Scarsdale, and wanted to recreate something similar at home. This is an Ina Garten recipe, and she never fails me.

"Somebody That I Used to Know" by Gotye. I find the xylophone haunting, and the lyrics are poignant. Love this track.
