Menu Plan Monday, 1/31 – 2/6

Our house was turned a bit upside down last week, when a frozen pipe in an upstairs bathroom led to a flood that damaged the ceiling and walls in our dining room and living room. Fans and dehumidifiers took took the place of our dining room table, which was shoved to the side and drafted into duty as a closet (everything had to be emptied out of a coat closet, which had a saturated ceiling). All the disorder did little to foster a week of cooking, though I did manage to make dinner Monday (Spinach Lasagna Roll-Ups) and Tuesday (Linguine with Chicken Thighs) night, and those were both successful. Hoping for a less eventful week on the homestead.

Monday: Leftovers (smoked beef ribs and Spicy Cabbage Slaw)

Tuesday: Sriracha-Glazed Chicken & Onions, steamed haricot vert, rolls, Ina Garten’s Beatty’s Chocolate Cake (for my dad’s birthday!)

Wednesday: Farro with Roasted Butternut Squash & Goat Cheese (I may try adding figs, too), roasted zucchini

Thursday: Easy Chicken Chili, whole grain tortilla chips, garden salad

Friday: Dal (still looking for a good recipe), brown rice, steamed broccoli

Saturday: Eat out

Sunday: At a Super Bowl party! I’m bringing Chocolate Trifle and a dip

    Second the figs sound so yummy w/the butternut squash and farro.
    Third I really love all of your traditions- like super bowl- and reading about what your addition for each year is.

  2. Hi guys! Sorry to hear about the flood…we had one once too and there was so much more involved in the clean up than I would have anticipated. Hope it is all sorted out now. When we lived in England, one of the people I worked with used to make a delicious dal recipe…and she tried to teach me…and I still have my scribbled notes in my recipes!
