Menu Plan Monday, 2/7 – 2/13

mealplanmonday v1 Menu Plan Monday, 2/7 2/13

It’s Sunday night, and I am hoping for a week where both kids to go to school for all five days. The past week was another doozy, with one or both boys home due to snow or illness for three out of the five school days. Then I was sick over the weekend. Thankfully, as I type we are all either healthy or on the mend, and I am looking forward to getting our house and commitments back in order tomorrow.

I did make my dad’s birthday cake (Ina Garten’s Beatty’s Chococlate Cake, which has a coffee kick to it), and a batch of Easy Chicken Chili. Otherwise, the week was largely a wash cooking-wise, and I ate very poorly too. I am glad our January/February glut of family birthdays is coming to an end so there is less cake around.

Monday: Moroccan Meatballs, Israeli couscous, garden salad

Tuesday: Bagels, hummus, raw carrots/cukes/peppers

Wednesday: Farro with Roasted Butternut Squash & Goat Cheese (+ figs), garden salad (bumped from last week)

Thursday: Leftovers

Friday: Chicken drumsticks, Mujadarra (Lentils & Rice with Caramelized Onions), challah, steamed broccoli

Saturday: Slow Cooker Vegetable Barley Soup, whole wheat pita, hummus

Sunday: Grilled flanken, challah, garden salad

Moroccan Chicken Tajine: I recently had a chicken tajine dish at Fig & Olive in Scarsdale, and wanted to recreate something similar at home. This is an Ina Garten recipe, and she never fails me.

"Somebody That I Used to Know" by Gotye. I find the xylophone haunting, and the lyrics are poignant. Love this track.
