Menu Plan Monday, 2/28 – 3/6

Today’s math: 3 days away on vacation + 1 fun day together with an old friend + 1 horrible day dealing with a stomach virus = house in shambles, suitcases still packed, no food in the fridge. I’m trying to get rehydrated and back to normal today, which makes me thankful I can pull a homemade meal out of my freezer for dinner tonight.

Monday: Easy Chicken Chili (from the freezer), tortilla chips

Tuesday: Mediterranean Meatballs, Israeli couscous, sauteed spinach

Wednesday: Slow Cooker Italian-Style Turkey Meatballs, whole wheat spaghetti, steamed broccoli

Thursday: Honey Spiced Chicken Thighs (& Breasts), green beans, dinner rolls

Friday: Leftovers, challah

Saturday: Out to eat

Sunday: Slow Cooker Vegetable Barley Soup, Sunflower Whole Wheat Quick Bread (bumped from previous week)
