Menu Plan Monday, 4/25 – 5/1

April has flown by in a blur of birthdays, holidays, spring sports, and volunteer commitments. May promises to be even busier, and I’m already finding myself looking forward to the unscheduled time that the boys’ summer break brings. I’m easing myself back into the school week with a simple menu.

Monday: Chicken soup, Passover Rolls, red and yellow pepper strips

Tuesday: Order in pizza and salad

Wednesday: Pineapple Chicken Salad (made with fresh pineapple), baguettes, spinach salad

Thursday: Grilled skirt steak, Grilled Steak Fries, Citrus-Garlic Grilled Broccoli, whole wheat tortillas (so the kids can make wraps)

Friday: Baked Meatballs (from the freezer), whole wheat spaghetti, marinara sauce, steamed broccoli

Saturday: Out to dinner

Sunday: Egg White & Avocado Salad, bagels, garden salad
