April has flown by in a blur of birthdays, holidays, spring sports, and volunteer commitments. May promises to be even busier, and I’m already finding myself looking forward to the unscheduled time that the boys’ summer break brings. I’m easing myself back into the school week with a simple menu.
Tuesday: Order in pizza and salad
Wednesday: Pineapple Chicken Salad (made with fresh pineapple), baguettes, spinach salad
Friday: Baked Meatballs (from the freezer), whole wheat spaghetti, marinara sauce, steamed broccoli
Saturday: Out to dinner
Sunday: Egg White & Avocado Salad, bagels, garden salad
