We had a great Memorial Day weekend, and I hope you did too. Now, on to the week ahead.
Monday: Take out
Tuesday: Personal Boboli pizzas with mushroom and red pepper topping for the boys; Triple Tomato Sauce with Ziti for me and Jason (this is the third time I’m bumping it!)
This is a really light cooking week for me, due to the boys spending time with grandparents (they have no school today or Friday) and my birthday!
I’ve also realized that I really don’t like to cook on Sunday nights — even when I have something simple planned I tend to try to get out of it. I’m too wrapped up in getting things organized for the week ahead, and then trying to carve out some time to relax. So, I’m going to work Sunday nights as leftovers, take out, or eat out into my regular schedule.
Also, I didn’t get around to making the lasagna on Saturday, so I’m making it tonight instead.
Monday: spinach & broccoli lasagna (my own recipe, I’ll post it tonight)
Tuesday: leftover lasagna
Wednesday:chickpea & sausage stew (if J. will be home for dinner, I’ll change this to a veggie chickpea dish, since he hates sausage)
Thursday: leftovers
Friday: Shabbat at my parent’s house (we’ll celebrate both my birthday and my dad’s — I’m bringing these cupcakes dipped in melted chocolate)
Saturday: pasta for the boys, wine & cheese for me & J. (pre-birthday warm-up!)
